  • 1 zucchini, sliced into half moons

  • 1 red onion, sliced

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp smoked paprika (optional)

  • Salt & pepper to taste

Garnish (Optional)

  • Lemon slices

  • Fresh parsley or thyme

Instructions

Step 1: Preheat Oven

  • Preheat your oven to 425°F (220°C).

  • Line a large baking sheet with parchment paper or lightly grease it.

Step 2: Marinate the Chicken

  1. In a bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, thyme, rosemary, salt, and pepper.

  2. Add chicken breasts and coat evenly.

  3. Let it marinate for 10–15 minutes (optional, but flavor improves).

Step 3: Prepare the Veggies

  1. In a large bowl, toss broccoli, bell peppers, zucchini, and red onion with olive oil, garlic powder, smoked paprika, salt, and pepper.

  2. Spread the veggies on one half of the sheet pan.

Step 4: Arrange the Chicken

  • Place the marinated chicken on the other half of the sheet pan.

  • Pour any leftover marinade over the chicken for extra flavor.

Step 5: Roast

  • Roast in the oven for 35–40 minutes, flipping chicken halfway through.

  • Chicken should reach an internal temperature of 165°F (74°C).

  • Veggies should be tender with lightly caramelized edges.

Step 6: Optional Broil for Extra Crisp

  • For a golden finish, broil for 2–3 minutes at the end. Watch carefully to avoid burning.

Step 7: Serve

  • Garnish with lemon slices and fresh herbs.

  • Serve hot, straight from the pan for a rustic, family-style presentation.

Tips & Tricks

  • Use bone-in chicken if you like extra juiciness; just increase cooking time by 5–10 min.

  • Swap veggies seasonally: asparagus, Brussels sprouts, or carrots work great.

  • Make it low-carb by adding cauliflower rice or zucchini noodles.

  • For a one-pan cleanup, line the pan with foil or parchment.
